Cleaning and Sanitizing

We always recommend sanitizing every surface and tool in a restaurant.


Cleaning removes dirt whereas sanitizing is kills bacterias. If you are just cleaning the surface in a kitchen it will be clean, but bacterias will be remain on top of surfaces.


A lot of sanitizers cannot penetrate through the layer of oil. That is why you need to first clean the surface and when it is clean then sanitize.
